Pebble top soil with a high percentage of clay, chalk and manganese,
exceptional terroir due to the nature of its soil and its exposure.
Area : 34 Ha ( 85 acres )
Vine varieties : 27% carignan, 36 % syrah , 28% grenache noir , 9 % cinsault.
average age of plants : + 20 years ( 2ha60 of syrah planted in 2000 and 2001)
density of plantation: 4500 à 5000 plants per ha
Vinification : red wine: hand harvesting and a part of mechanical harvesting, classic vinification with a long maceration for 3 weeks, ageing in concrete tank for 18 months giving the tradition vintage.
The top quality wine is selected (syrah, old grapewine of carignan ...), and a part of it is transfered to oak barrels ( 2 or 3 wines used before) for 10 months, depending on the tasting, giving the “ fûts de chêne” vintage.
A part of it is aged in new oak barrels (about 50 %), giving "la Cantilène"
rosé: hand harvesting and a part of mechanical harvesting, bled rosé ( wine run off skins in early fermentation) alcoholic fermentation at a low temperature ( 16°C), malo-lactic fermentation not yet started.
