Situation: Region of Limoux
Grape Variety : 100 % Sauvignon
Vinification : Harvested by hand,
and pressed immediately on arrival to the cellar,
fermentation at a base temperature of 16 à 18° C,
fermentation malolactique non faite.
Tasting : Tainted white, leaning towards a pail.
Nose fine, blooming of flowers (genêts).
A fat attack with a nice balance.
Serve with : fresh fish with sauces,
white meats, and or cold spicy meats.
The before dinner drink.
Ageing time : 2 ans
Condition : cartons of 6 bottles
